Voetbal
Hello hello! This weekend was filled with lots of fun Belgian activities such as waffle eating, biking, flea markets, and voetbal! (which means soccer). Simon and I went to a game on sunday to watch KAA Gent. They have a very nice new stadium which everyone seems to be excited about, even though the team itself is not that good. But at the moment they are in second place! And the game we watched they had to either tie or win to stay in second place, so it was very exciting! The final score was 1-1, Gent scoring in the last minute.
This weekend was the end of the season of our favorite flea markets down by the dock which is sad, but we will just have to find new ones! We also tested out my new bike mount! It took us a few tries to figure out the best angel and it took me about a million more tries to figure out how to get it uploaded onto this blog. So I am not promising that the quality is good or that you can even open link, but I will keep working on it and hopefully next time it will be better. The video that you will hopefully see is just of simon and me riding through the center of Gent.
In other news, I have been trying to cook a lot more! I am attempting to follow the paleo diet, so lots of meat, veggies, fruit and trying to cut out carbs and sugar mostly. It is going pretty well, and my cooking is improving slowly but surely. Now don't get me wrong, by improving I mean I can now chop of few veggies and throw them into my scrabbled eggs but hey a girl has to start somewhere! I am not being to strict or crazy about the diet, it is hard to always resist the fries, beer, and waffles all around me, but I do feel a lot better having cut back on the bad stuff. I will keep you update on my progress and if by some miracle I perfect a recipe I will be sure to share it!
Also exciting news is that Simon got a full contract with his job! Since January he has been on a temporary contract with his job (its a little confusing to explain their system), which was nice because that allowed him to come to America for two months. But now he signed a full contract which means they cannot fire him at any time but he also would not be able to take a two month trip again any time soon.
Anywho, Visa update is still the same, just waiting for the police officer to come by our apartment hopefully in the next week or two!
